MUTTON HOTPOT Take mutton chops, flour and pepper them and fry until brown. Pack them in the 'hotpot jar', tails uppermost. Slice a small onion for each chop, fry them and pack them amongst the chops. Take carrots,chop them, flour and brown them and pack them with the onions. Take some thickly sliced potatoes and put them on top like slates of a roof. Finally, take the fat that all has been fried in, thicken it with flour, add boiling water and stir until thick. Season, and add a spot of sugar and perhaps a drop of Yorkshire relish. Pour in the gravy until is level with the potatoes and bake for about two hours. Fifteen minutes before it is fully cooked, take off the lid from the jar to brown the potatoes. |
